KOMBUCHA: Make delicious, gut-healing kombucha at home!

Kombucha is a fermented food, meaning it contains live bacteria, which help to create and maintain a thriving healthy microbiome in our gut!


Follow these easy step-by-step instructions to make delicious gut-healing kombucha at home!

Ingredients:

1 scoby

1/2 cup raw kombucha

1/2 cup coconut sugar (or other sugar)

8-10 tea bags or 1/2 cup looseleaf tea (green or black tea)

2L filtered water

Instructions:

1st Ferment:

  • Boil water, add tea bags. Let steep for ~30 minutes (or longer for stronger flavour)

  • Remove tea bags and let cool to room temp

  • Stir in sugar to dissolve

  • Place kombucha scoby and raw kombucha into large glass jar. Pour cooled tea into jar.

  • Cover opening of jar with a cloth and elastic band

  • Place in a dark


cupboard for 7-10 days (can also cover with a cloth)

  • Taste after 7-10 days. If still too sweet, leave for a few more days. Flavour will turn towards vinegar as the scoby 'eats' the sugar

2nd Ferment:

  • Pour kombucha into individual glass jars / bottles.

  • Leave at least 1/2 cup of kombucha in brewing jar with Scoby for the next batch

  • Optional: Add any other additives (such as cut fruit, ginger, turmeric)

  • Close bottles with lids and leave on countertop with 2-3 days to carbonate

  • Place into fridge to store


Scoby Care:

  • If not making another batch right away, add a teaspoon of sugar to feed scoby in between brewings. Store in cupboard with cloth covering the jar.

  • Scoby doesn't like metal! Never use metal to stir the kombucha, or move the scoby. Always use plastic, ceramic, or clean hands.
